Aloo Gosht (Pakistani Meat & Potatoes) Recipe

Aloo gosht is Pakistan’s version of classic meat and potatoes.

Ingredients For Aloo Gosht

  • 4 lbs of bone-in beef or mutton
  • 6 medium sized potatoes, peeled and cut into chunks
  • 2 large onions, sliced
  • 4 tomatoes pureed
  • 1/2 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 4 serrano peppers
  • 1/2 cup of cooking oil or ghee
  • 2 tsp cumin powder
  • 1 tsp ground turmeric
  • 1 tsp red chili powder
  • 2 tsp garam masala
  • 2 tsp coriander powder
  • 4-5 cloves
  • 5-6 peppercorns
  • 2 tsp salt
  • Fresh cilantro and mint (for garnishing)

The recipe above is for 5-6 servings.

How To Make Aloo Gosht

Step 1: Preparing The Masala Mixture

  • Add the oil or ghee into a large pot and place it over a medium flame. 
  • Add the onions and saute them until they are a shade of light brown.
  • Add the pureed tomatoes, and cook for 3-4 minutes.
  • Add the yogurt, and mix in well with the tomatoes and onions
  • Continue cooking for 4-5 mins
  • Add ginger-garlic paste and serrano peppers.
  • Add in the salt and spices and mix well.
  • Add in the meat, and cook until all sides have browned.  This will usually take 8-10 mins.

Step 2: Preparing The Meat

  • Add the meat in to the pot with the masala, and cook until all sides have browned.  This will usually take 8-10 mins.

Step 3: Add In the Potatoes And Finish Cooking

  • Add in the Potatoes with the meat.
  • Add enough water to fully cover the meat and potatoes.
  • Turn the heat on high and bring the water to a boil.
  • Once boiling, adjust the heat down to a medium level and cook until the meat and potatoes have tenderized.
 
You may notice at the end that the oil has separated from the water and risen to the top.  This is also a sign that the Aloo Gosht is done cooking.  Sprinkle some cilantro and mint over the aloo gosht before serving.

Step 5: Combine The Meat And Daal

  • Add the cooked chana daal to the pot with the meat.
  • Add 1 cup of water and set it on a simmering flame for 10-15 minutes.  

Step 6: Add The Garam Masala

  •  Add the garam masala in with the daal and meat and mix well.
  • Cook for another 4-5 minutes.

At this point, your daal gosht is ready.  Garnish it using using a mix of cilantro and mint and serve.
